Green CafeGreen Cafe Connects Campus With Local Farmers
To help increase sustainability awareness throughout the greater Spelman College community, Spelman Dining Services recently launched “Green Café,” an initiative designed to showcase local food and build collaborative efforts with local farmers.

Using herbs from gardens around campus and locally grown foods, members of the Sustainable Spelman committee and students leading campus sustainability efforts enjoyed dishes such as collard greens and oyster mushroom spring rolls with thai basil dipping sauce; sweet potato and herb-stuffed chicken breast; rosemary-grilled zucchini and fresh pea and basil puree; and cantaloupe and tofu ambrosia with mint. Participants also gained information and insight on the importance of eating local food from Charles Henry, a local African-American farmer with the Coastal Georgia Small Farmers Co-op.

As mentioned in the October issue of Inside Spelman, the committee is now focusing on the "Make a Difference Monday" campaign, an initiative aimed at the importance of sustainable food practices.
